Cañada Azul Coffee
Awakening consciousness with a delicious coffee, it tastes good and feels good. We are proud to say that since 2016, Cañada Azul Coffee has been part of our Productive Projects. This coffee, cultivated by over 150 small-scale producers from the Tacaná Volcano Biosphere Reserve in Chiapas, has been an exemplary model as a sustainable, fair trade (without intermediaries), and socially responsible project. By purchasing directly from the producers, we help make the distribution chain more efficient.

In the Tacaná Volcano Biosphere Reserve in Soconusco, Chiapas, Mexico.

Flavor in every sip
Cañada Azul is an organic, high-altitude coffee with a medium roast, cultivated by Mexican hands in volcanic soil.
Aroma: Intense with hints of chocolate, citrus, and a touch of woodiness.
Taste: Pleasant, without defects in the cup, with notes of chocolate and a hint of citrus.
Acidity: Medium and citrusy.
Body: Intense with a lingering and pleasant aftertaste on the palate.
Sweetness: Medium.





Process
Café Cañada Azul goes through a production process that begins in the Tacaná Volcano Reserve with the careful selection of coffee based on crop planting, shading, organic fertilization, and harvesting. In the second phase, the coffee is de-pulped, fermented, washed, sorted, and dried until the green bean is obtained, which will be ready for roasting, grinding, and distribution in our restaurants.
